Ingredients

  • Salt and pepper to season
  • 2 lb flank steak
  • Avocado Chimichurri
  • One tablespoon fresh of oregano
  • ¾ cup fresh cilantro
  • Three tablespoons red wine vinegar
  • One garlic clove
  • One tablespoon fresh lime juice
  • Four tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon red pepper flakes
  • Three diced avocados

Instructions

  1. Heat the grill to a medium-high or around 400 degrees
  2. To the food processor, add oregano, garlic, cilantro, lime juice, red wine vinegar, red pepper flakes, olive oil, pepper, and salt. 
  3. Add a bowl of diced Avocado and the blended chimichurri sauce. Lightly toss to coat and be careful not to mash the Avocado.
  4. Season a room temperature flank steak with pepper and salt on both sides.
  5. Place your steak on the grill and let it cook for around 5-7 minutes on each side.
  6. Remove from the grill and let it sit for approximately 3 minutes and then slice it.
  7. Serve your steak with avocado chimichurri sauce.
